FRENCH PASTRY PIE CRUST
Ingredient
Cake flour/ plain flour 250g
Salt 1 Pinch
Water 50ml
Egg yolk 1no
Unsalted butter 125g
Step-by-step
1. 1. Cut unsalted butter into smaller pieces, chill in fridge.
2. Stir in egg yolk into water, mix the egg mixture well. Chill in fridge.
3. Mix salt to cake flour/ plain flour evenly.
4. Put in cake flour/ plain flour and cold butter in TM bowl. With measuring cup on, set Turbo/ 1sec.
5. Give the ingredients a stir and scrap down sides of bowl, with measuring cup on, again Turbo/ 2sec. You will get well blended flour and butter bits
6. Now set 1min/ rev1 to initiate mixing. Pour in chilled egg mixture in 4-5 times during count down of time. It is better if you stop half way to give the ingredients a stir prior to continuing with balance pours.
7. Pour the dough onto worktop, lightly press a few times to form a dough. Press flat, wrap with cling film, chill at least 1 hour before use.

This pie crust recipe is suitable for matching savoury or sweet pie fillings.
